Ingredients

  • 2 cups rolled oats
  • 1 Tbsp chia seeds
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 3/4 cup plain Greek yogurt
  • 1-1/4 cup milk of your choice
  • 1 large egg
  • 1/3 cup maple syrup
  • 2 Tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1-1/2 cups blueberries (fresh or frozen) or berry of choice

Equipment

  • 8" x 8" baking dish
  • measuring cups and spoons
  • large bowl
  • medium bowl
  • whisk
  • mixing spoon

Directions

  1. Preheat oven to 350° F.
  2. Grease an 8" x 8" baking dish and set aside.
  3. In a large bowl, mix together the oats, chia seeds, salt, and baking powder. Set aside.
  4. In a medium bowl, whisk together the Greek yogurt, milk, egg, maple syrup, coconut oil and vanilla extract.
  5. Pour the liquid mixture over the oat mixture and stir to combine. Add the blueberries (or other berries) and stir again.
  6. Pour mixture into the prepared baking dish. Bake for 45 minutes or until the top is golden and the oatmeal is set. Let cool 5 minutes before serving.
