Oatmeal Raisin Cranberry Cookies
Who doesn't love a great oatmeal cookie? This version is loaded with raisins and cranberries.
Ingredients
- 1/2 cup plus 6 Tbsp butter (softened)
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1-1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt (optional)
- 3 cups quick oats
- 1 cup raisins
- 1 cup dried cranberries
Equipment

Directions
- Heat oven to 350° F.
- In large bowl, mix butter and sugars on medium speed until creamy.
- Add eggs and vanilla and mix well.
- Combine flour, baking soda, cinnamon and salt in small bowl and add to butter mixture.
- Add oats, raisins and cranberries; mix well.*
- Drop dough by rounded tablespoon onto un-greased cookie sheet.
- Bake 8–10 minutes.
- Cool completely.
*A great trick with cookies is to chill the dough in the fridge for 10 minutes before baking. This firms up the dough so the cookies won't spread as quickly when you cook them.
