Ingredients

  • 2 large eggs
  • ¾ cup brown sugar
  • ¼ cup oil
  • ¼ cup applesauce (or add 1/4 cup more oil if you don't have applesauce)
  • 2 tsp vanilla
  • 1 ½ cups whole wheat flour (we like spelt)
  • 1 ¼ cups large flake oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ¾ cup semi-sweet chocolate chips

Directions

  1. In large mixing bowl, blend together the wet ingredients and sugar (eggs, sugar, oil, applesauce, and vanilla) with a fork until smooth. 
  2. In a separate mixing bowl, whisk together remaining dry ingredients (flour, oats, baking soda, cinnamon, and salt).
  3. Stir flour mixture into wet mixture with a mixing spoon.
  4. Stir in chocolate chips.
  5. Drop by rounded 1 Tbsp, about 2 inches (5 cm) apart, onto lined or greased baking sheets. With fork, flatten to ½-inch (1 cm) thickness.
  6. Bake in 325° F oven until edges are golden but centres are slightly soft, about 10 minutes. Transfer to cooling racks and let cool.

Make-ahead: Store in airtight container for up to 5 days or in the freezer for several weeks.
