Ingredients

  • 1 cup brown sugar
  • 1 cup margarine
  • 1/2 cup milk
  • 1 egg
  • 1 cup coconut
  • 1 cup graham cracker crumbs
  • 1/2 cup walnuts
  • dash vanilla
  • whole graham wafers
  • For Butter Icing
  • 1/2 cup butter
  • 3/4 teaspoon almond or vanilla extract
  • 1 to 2 cups confectioners sugar
  • 2 to 3 tablespoons milk

Equipment

  • 11 x 8 pan
  • measuring cups
  • measuring spoons
  • mixer
  • stirring spoon

Directions

  1. Put sugar, margarine, milk and egg in saucepan stirring continually until it comes to a full boil. Boil for one minute then remove from heat.
  2. Add crumbs, walnuts, coconut and vanilla.
  3. When cool, line an 11 x 8 pan with whole graham wafers. 
  4. Pour filling over the wafers. Cover mixture with whole wafers and ice with butter icing. 

To prepare Butter Icing:

  1. Cream together 1/2 cup butter with 3/4 teaspoon almond or vanilla extract until fluffy. 
  2. Blend in 1 to 2 cups confectioner's sugar, half a cup at a time, adding 2 to 3 tablespoons milk as you blend, until the icing reaches the desired consistency.
