Ingredients

  • 2 cups shredded coconut (as large a shred as you can find)
  • 1 cup hemp/chia/sunflower seeds in any proportion
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil
  • 1/2 cup honey or maple syrup

Equipment

  • measuring cups and spoons
  • small saucepan
  • spatula
  • large bowl
  • storage container

Directions

  1. Combine honey or maple syrugp and coconut oil in a small saucepan and melt over low heat.
  2. Sitr in cocoa.
  3. In a large bowl, combine other ingredients and pour warm mixture over them.
  4. Stir to combine, refrigerate for ten minutes, then form into bite-sized balls.

Makes approximately 18 balls. Pack in a storage container in the fridge for up to two weeks (though they won't be around that long, guaranteed).

Sarah says: “My kids like to make these with me—mostly because they are allowed to get their hands really messy and they taste like candy, even though they are unprocessed, vegan, gluten free and raw (shhhh). They are a perfect one-hand snack for nursing mothers and for families on-the-go—you can grab a couple from the fridge for breakfast as you run out the door. I originally got the recipe from an online friends recipe exchange, and have adapted it slightly for our family.”
