Chocolate Peanut Butter Balls
This is a recipe my mom made when I was a kid and I still make it. It is my kids' favorite Christmas cookie/treat!
Ingredients
- 1 cup peanut butter
- 1 cup chopped dates
- 1 cup icing sugar
- 1 cup walnuts
- 8–10 semi-sweet chocolate squares
Equipment
- measuring cup
- bowl
- electric mixer
- double boiler
- waxed paper
- 2 forks
Directions
- Combine peanut butter, dates, icing sugar and walnuts in a bowl. Mix well.
- Roll into balls about 3/4" in diameter.
- Melt hot chocolate over hot water in double boiler.
- Using two forks, dip each ball into melted chocolate and place on wax paper to dry.
Variations:
- If using chopped Medjool dates, reduce or omit icing sugar.
- Slivered almonds can be used instead of walnuts.
