Chocolate Peanut Butter Balls

This is a recipe my mom made when I was a kid and I still make it. It is my kids' favorite Christmas cookie/treat!

Ingredients

  • 1 cup peanut butter
  • 1 cup chopped dates
  • 1 cup icing sugar
  • 1 cup walnuts
  • 8–10 semi-sweet chocolate squares

Equipment

  • measuring cup
  • bowl
  • electric mixer
  • double boiler
  • waxed paper
  • 2 forks

Directions

  1. Combine peanut butter, dates, icing sugar and walnuts in a bowl. Mix well.
  2. Roll into balls about 3/4" in diameter.
  3. Melt hot chocolate over hot water in double boiler.
  4. Using two forks, dip each ball into melted chocolate and place on wax paper to dry.
Variations:
  • If using chopped Medjool dates, reduce or omit icing sugar.
  • Slivered almonds can be used instead of walnuts.
