Chewy Ginger Cookies

Studded with crystallized ginger these cookies have just the right blend of sugar and spice.

Ingredients

  • 2 cups + 2 tablespoons flour
  • 1/2 teaspoon ground cloves
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1/4 cup dark molasses
  • 1 egg
  • 3.5+ ounces crystallized ginger, chopped coarsely
  • 1/4 cup turbinado sugar or other coarse sugar for rolling dough

Equipment

  • wooden spoon
  • large and small mixing bowls
  • measuring cups/spoons
  • cookie sheet
  • mixer (optional)

Directions

  1. Preheat oven to 375°F.
  2. Sift dry ingredients together. Set aside.
  3. Combine softened butter, sugar, molasses and egg.
  4. Beat well using a mixer, if available.
  5. Stir in crystallized ginger.
  6. Add dry ingredients to wet mixture. Mix well.
  7. Form 1-inch balls. Roll in course sugar. Place on greased cookie sheet, 2 inches apart.
  8. Bake 8-10 minutes.
