Cheesy Tuna Pasta Comfort Food

Ingredients

  • 2 cups Pasta (elbows or spirals best)
  • 1 Tin of tuna
  • 2 cups grated cheese
  • 2 Tbsp butter (or non-dairy alternative)
  • 2-3 tbsp flour
  • 1 + cups milk (rice, soy or cow's)
  • Mustard (optional)
  • Lemon juice (optional)

  1. Cook pasta as per pasta instructions.

  2. In a separate pan, melt the butter (or non-dairy alternative). When melted (over low heat so it doesn't burn), stir in the flour gradually until you have a smooth paste. Do this gently. Don't worry if lumps form, keep stirring. If necessary add a little extra butter to get a smooth paste.

  3. When  a smooth paste is created, add a little milk. Again stir to get a smooth paste again. Gradually add the rest of the milk, stirring all the time.

  4. When you have a runnier mix with no lumps, turn the heat up a little and begin to add the grated cheese. Stir in and keep stirring until it melts. You should now have a creamy sauce. Feel free to add a little more flour/cheese/milk until you get a good creamy consistency.

  5. Add a dab of mustard and a few drops of lemon juice to add an extra tang.

  6. When your creamy sauce is ready (approx 10 min), stir in the tuna. (For vegetarians just go with the creamy sauce, or add sautéed mushrooms or other vegetable of choice).

  7. Pour sauce over cooked pasta.

Serve this with a side salad, or feel free to jazz it up with fresh spinach or pepper flakes. Quick, simple, delicious, and the children love it. Enjoy!
