-
Cook pasta as per pasta instructions.
-
In a separate pan, melt the butter (or non-dairy alternative). When melted (over low heat so it doesn't burn), stir in the flour gradually until you have a smooth paste. Do this gently. Don't worry if lumps form, keep stirring. If necessary add a little extra butter to get a smooth paste.
-
When a smooth paste is created, add a little milk. Again stir to get a smooth paste again. Gradually add the rest of the milk, stirring all the time.
-
When you have a runnier mix with no lumps, turn the heat up a little and begin to add the grated cheese. Stir in and keep stirring until it melts. You should now have a creamy sauce. Feel free to add a little more flour/cheese/milk until you get a good creamy consistency.
-
Add a dab of mustard and a few drops of lemon juice to add an extra tang.
-
When your creamy sauce is ready (approx 10 min), stir in the tuna. (For vegetarians just go with the creamy sauce, or add sautéed mushrooms or other vegetable of choice).
-
Pour sauce over cooked pasta.
Serve this with a side salad, or feel free to jazz it up with fresh spinach or pepper flakes. Quick, simple, delicious, and the children love it. Enjoy!
