Everyone loves pancakes and these veggie pancakes are healthy & delicious! Our Kitchen Hack is to use our leftover vegetables and combine with eggs, cheese, milk & flour to make easy veggie pancakes! Grab your favourite veggies (carrots, zucchini, spinach, onions, bell peppers, cabbage - whatever you like), grate or chop in a food processor and combine with your choice of flour & seasoning, a few eggs, a bit of milk and some grated cheese. Cook your pancakes in a hot pan and serve with Sour Cream, Salsa, Mashed Avocado, Hummus or whatever you like! These go fast, so make enough for everyone & ENJOY!
