With a bounty of spring crops, a gardening mom and foodie dad, what else is this seven year old with a sweet tooth going to do? Armed with growing confidence about cooking—and a bulging pantry and garden—Lila is taking control of the kitchen, her cravings, and her parents! This recipe for Rhubarb Jewel Cake is easy for kids to make (you can even hand blend it). It was created by Claire Livia Lassam and published in the Spring 2015 issue of Edible Vancouver & Wine Country—a publication close to our hearts since Lila’s mom Andrea Bellamy is also a contributor. Connecting local food sources as ingredients for terrific food experiences is important, part of the fun and ultimately more delicious. Hopefully in sharing it with our daughter here we will inspire others to do the same.
