Frittatas are often described as a crustless quiche, but we’d argue they’re a variation on an omelet -- once they’ve firmed up in a frying pan, you pack them full of your favourite veggies, top with cheese, and transfer them to the oven for a quick bake. The result is a super quick and nutritious meal that feels fancy but is very simple to make. Frittatas are also an excellent way to use up leftovers—whatever veggies you have in your fridge can be combined with cheese or chorizo (or both!) to make a crowd-pleasing breakfast, lunch, or dinner.
