Fresh Pea Salad

A little jewel of a salad with a Japanese inspired dressing to celebrate summer.

Ingredients

  • 1 lb fresh peas
  • 1 bunch of radishes
  • 1/2 tsp sesame oil
  • 2 tsp mirin
  • 2 tsp soy sauce

Equipment

  • measuring spoons
  • cutting board and small knife
  • small mixing bowl

Directions

  1. Shell peas. Wash and thinly slice radishes. Toss together in a small mixing bowl.
  2. Add sesame oil, mirin and soy sauce and toss together. Portion into small serving bowls.

Shelling peas is such a social activity, and young hands will want to help. This is such a simple, tasty, salad that we make it over and over again as long as the fresh peas last.
